Dinner Hacks: Lemon Drops "Mock"-tails

It’s mid-January and many people have already thrown in the towel when it comes to their healthy eating/living resolutions. Let's face it. A diet needs variety. It needs flavor. It needs some zing! If you’re finding yourself post-cardio, post-Paleo, post-Keto ready for a bit of a backslide with a delicious, sugary cocktail, maybe we can help! Add a juicy twist to your dinner with our healthy “mock”-tail - the Switchel (or Haymaker’s Punch)!

The Switchel dates back to American Colonial days where it was traditionally served to thirsty farmers at harvest time (hence the nickname “haymaker's punch”). But this tangy blend of water, citrus, and apple cider vinegar is a probiotic dream at any time of the year. This combo builds healthy bacteria in the gut, helps alkalize your body, reduce inflammation, and aid in digestion.

We’ve gathered a few perfect winter recipes for you to try tonight with our eco-friendly Lemon Drops Citrus Reamer & Ice Infuser tray, from our friends over at Full Circle. Give your body a healthy dose of citrus joy with these easy to make (& impressive) citrus cubes in your Switchel mock-tails. Enjoy a flavor party your taste buds (and your liver) will thank you for.

Super Easy Lemon Ginger Switchel

What you’ll need for your Lemon Drops infuser set:

  • 3 1/2 cups water

  • 2 lemons

  • 3 tbsp apple cider vinegar

  • 1 inch fresh ginger (peeled and grated)

  • 1 tablespoon raw honey or maple syrup (to taste)

  • fresh mint (optional)

Instructions:

  • Ream lemons into Lemon Drops citrus ice infuser tray and freeze till solid.

  • Place remaining ingredients in a quart mason jar. Cover and refrigerate for at least 2 hours.

  • Strain the mixture to remove the ginger pieces, then add your Lemon Drops to the mixture. Garnish with fresh mint, if desired.

    Extra yum twist:

Add a touch of sparkling water to the top for a refreshing twist.

Grapefruit Haymaker’s Punch

What you’ll need for your Lemon Drops infuser set:

  • 2 grapefruits

  • 4 slices ginger

  • 3 ¾  cups water, divided

  • 2 tablespoons apple cider vinegar (“with the mother in it”) more to taste

  • 1 tablespoon honey ( preferably raw), agave, or maple syrup

Instructions:

  • Ream 1 grapefruit into Lemon Drops citrus ice infuser tray and freeze till solid.

  • Place ginger in one cup of water in a small pot and bring to a boil. Let cool completely. You don’t want to kill the healthy bacteria in the vinegar or the health benefits of the raw honey.

  • Ream other grapefruit and add juice to ginger-water, remaining water, apple cider vinegar, and your choice of sweetener into to a quart mason jar.

  • Add grapefruit Lemon Drops cubes, Stir and adjust grapefruit juice and sweetness to your taste.

  • Add ice and cocktail into glass and enjoy!

Extra yum twist:

Use sparkling water in place of remaining water for a fizzy twist.
